	July Recipe: Cooked Zucchini Salad (Kolokithakia Vrasta Salata)
Ingredients: 2 lbs small young zucchini (courgettes) Oil-Lemon Dressing Preparation: Lop both ends off zucchini and wash. Drop in a large pan half filled with hard boiling water and boil 15-20 minutes, until tender. Do not overcook. Drain in a colander and pour a little cold fresh water over them, to set the fresh green color and the texture. Drain well. If cooked in advance, keep covered in the refrigerator, until used. To serve, drop them for a minute in hard-boiling water and drain. Arrange on a platter whole or cut in rounds. Pour on oil-lemon dressing, just before serving. Greek Islands

Syros

Syros lies in the middle of the Cyclades between Kythnos and Tinos. It has an area of 86 sq. km., a coastline of 87 km., and a population in excess of 20,000. Close to Piraeus (the trip by ferry takes only 4 hours), Syros is connected by ferry with Rafina, Tinos, Mykonos, Paros, Naxos, Ios, Santorini, and other Cycladic islands. It is also connected with Athens by plane. Syros like the other Cycladic islands was inhabited from the early prehistoric times. Excavations have brought to light finds of importance which have been a great help in the study of this ancient civilization. In dividing it up into periods, the term "Keros-Syros" is applied to that from around 2700 BC to 2300 BC. If we turn from prehistoric to historical times, we at once note the presence here too of the Ionians. In the 6th century BC, Syros was a flourishing island. After the Persian Wars, Syros was an ally of the Athenians. Then followed the rule of the Macedonians, the Romans and the Byzantine rule. From 1207, the island passed through the hands of many Venetian masters before finally falling to the Turks in 1537. From that period the island followed the history of the other Cycladic islands until its liberation. Today, Syros is the administrative center of the Cyclades Prefecture. Despite the fact that is the capital of Cyclades from the point of view of the architecture has nothing to do with Cyclades! This "strange" fact taken together with its excellent landscapes and beaches and the proximity to Athens, transformed the island into a very popular tourist center.

In the Greek family, it is customary to give the grandchildren the first names of their grandparents. The middle name is usually the father's first name. This tradition preserves the continuity of the family, creating a link between the present generation and its ancestors and honors the grandmothers ad grandfathers, who enjoy having namesakes. If you do not follow this tradition, be sure to discuss namesakes and discuss the matter with your parents to avoid any hurt feelings. To some it is an insult to neglect to name the grandchildren after them.

A child's first name is the first name of either a paternal or maternal grandparent - the custom varies from region to region. The first two methods closely follow the Greek tradition of always naming the first male after the paternal grandfather. The third method is more America.
