February Recipe:
Cheese Pie  Tiropita

6 tablespoons Butter
8 tablespoons Flour
2 cups Milk
1 teaspoon Salt
dash Nutmeg
1 lb. Feta Cheese
1 cup grated (or Parmesan) Kefalotiri Cheese
4  Eggs
chopped Parsley
3/4 lb. Phyllo (pastry sheets)
3/4 cup melted Butter

Melt butter in small saucepan over low heat. Blend in flour until smooth. Gradually add milk, stirring constantly with wire whisk or wooden spoon. Add salt and nutmeg, stirring occasionally, simmer for 5 minutes, or until white sauce is thick. Mash feta cheese with a fork and combine with the grated cheese, well beaten eggs, parsley and white sauce. Butter a 9X13 inch baking pan. Line with half the pastry sheets, brushing each sheet with butter, and letting them come up the sides of the pan. Pour in the cheese filling and cover with the remaining pastry sheets brushing each sheet with butter. Brush top with remaining butter and, with a sharp knife, score the top sheets into strips about 3 inches wide from one end of the pan to the other. Bake in a moderate oven until golden, about 45 minutes. Cut into squares and serve hot.

Greek Customs and Traditions in America

Name Days

Many Greek Americans describe with nostalgia the old days when family members and friends gathered together to celebrate a name day. Along with Easter and Christmas, name days were among the most joyous occasions in the family, especially the name day of the male head of the family. The name day, not the birthday, was remembered.

Name day celebrations gave the immigrants a continuity with the customs of Greece. A typical party in Greece, even today, is an open house with different kinds of food and drink, especially brandy. An invitation is not required. For example, on St. Basil's name day (Jan. 1st) every household with a member named Basil, celebrates. One simply drops by different homes to wish the honoree, "Chronia Polla" ("Many Years").

Such spontaneous visits are the exception in America. If a name day party is held here, guests attend by invitation only. Perhaps a greater appreciation of the name day's significance will revive the joyous tradition of celebrating name days.

"Birds Got To Fly"
Birds Got to Fly is fiction based upon more or less recollections and related experiences of the author. The upshot of these events with a dramatic degree of embellishment lent themselves for an intriguing literary piece that provided a general road map for the core theme. Birds Got to Fly portrays the story of Zack a teenager who sped through his teens and into a revelation that he was not a kid any more. For Zack it was an irresistible time as an adolescent to hit the road and to engage head-on into capricious adventures with little knowledge of the outcome..
