June Recipe:
Eggs with Tomatoes -
Avgha Me Tomatoes

Ingredients:
1/2 cup Olive Oil
1 medium-sized and diced Onion
1 1/2 lbs. ripe, peeled and sliced. Tomatoes
Salt
Pepper
1 teaspoon Sugar
6 whole or beaten Eggs

Preparation:
Heat oil in a large frying pan. Add the onion and cook until soft. Add tomatoes, salt, pepper and sugar. Simmer for 30 minutes or until tomatoes are soft. Add the eggs, whole, or beaten. Cover and cook for about 3 to 4 minutes. Serves 3 to 4.

Mykonos' cosmopolitan character has made it famous as an international tourist resort. The whole complex of islands including Mykonos-Delos-Rhenia, has been officially characterized as an area of exquisite natural beauty and, is protected in accordance with special legislation in order to preserve the unique natural and aesthetic beauty of the landscape. The tourist who comes to Mykonos, wherever he finds himself and despite the tourist development, can enjoy a unique natural environment with indented coasts, impressive rocks, old cottage houses, countless small and secluded churches, huge windmills and tiny pigeon-lofts. All these together with the clear atmosphere, the summer breeze, the colors - light and dark blue, gray, white - explain why Mykonos has inspired painters and photographers and has become the favorite holiday resort for many socialites. Mykonos covers an area of approximately 85 km and it is situated almost in the middle, between Tinos and Naxos and east of Syros where Ermoupolis, the capital of Cyclades is situated. Mykonos population is 6,500 people but during the summer period the number of tourists visiting the island is multiplied.

Greek Marriage - Excerpts from:



Greek weddings sparkle. There is joy, laughter, loud bouzouki music, mountains of food and coiling lines of boisterous dancers.  In the United States, most of the social customs surrounding the wedding festivities are American, with a few Greek customs here and there. However, the wedding ceremony itself remains pristinely Greek Orthodox, unchanged for centuries. It incorporates human joy with the joy of heaven when two people are united in holy matrimony.

Blessing of the Rings
In the first part of the service, the couple becomes betrothed by the church. The priest blesses the rings and touches the foreheads of the bride and groom with them. Making the sign of the cross above their heads with the rings, he proclaims to each of them "The servant of God (name) in the name of the Father, and the Son, and the Holy spirit." The rings are put on the right hands, and the official sponsor-koumbaros (male) or koumbara (female), exchanges the rings three times, symbolizing the complimentary role of husband and wife................
